Biscotti Gelato is an updated and refined version of a line first released in a limited batch at the beginning of 2025. That initial release showed strong potential, and the 2026 revision focused on improving overall stability and consistency through extensive in-house population runs on both parental lines.
The Biscotti (Cookies) side was kept true to form, selected for its structure, density, and characteristic baked, slightly spiced profile. The Gelato (Sherbinski's) side was steered toward a phenotype with a stronger Sunset Sherbet influence, adding greater depth and complexity to the terpene profile.
The resulting expression blends a layered Gelato character — creamy sweetness with gas, berries, and light tropical notes — with a doughy, baked flavor and a subtle spicy edge. The terpene profile develops with depth rather than presenting as one-dimensional.
Stability was a core focus: parental selections were stress-tested across different conditions to identify and eliminate weaker traits. The result is a population with improved vigor, stronger structure, and more consistent expression across the board.
